Summer Berry Salad with Raspberry Dressing

Eating enough fruits & vegetables during the day s a great way to stay hydrated & cool on warmer days. Toss it all into one bowl, top it with some fat & protein… you’ve got a well rounded meal!

Salads are a great way to get creative with the produce that is in season, especially during these warmer months! Lettuces are starting to come into gardens quickly, berries are sweeter than ever, it’s a match made in heaven!

This refreshing salad has allll that… & some extra goodies too! I whipped up my own fruited salad dressing that brings out the bright in the berries, tastes delicious & won’t weigh your salad greens down like an overly oiled vinaigrette.

Summer Berry Salad with Raspberry Dressing

Prep Time: 30 minutes
Servings: 4

INGREDIENTS

For Salad

  • 8 c mixed salad greens (*choose greens you enjoy)

  • 1 lb. chicken (grilled, baked, or roasted)

  • 2 c fresh strawberries, sliced

  • 2 c fresh blueberries

  • 1/2 c pistachios, shelled

  • 1/2 c feta cheese, crumbled

For Dressing (makes ~ 20 Tbsp.)

  • 1 c fresh raspberries

  • 1/4 c olive oil

  • 3 Tbsp. red wine vinegar

  • 2 Tbsp. balsamic vinegar

  • 2 Tbsp. maple syrup

INSTRUCTIONS

  1. In a food processor or high speed blender, add all ingredient for the dressing.

  2. Blend until smooth & pour into an airtight container.

  3. In a large salad bowl if serving for others, or meal prep containers for the week, add the lettuce greens, berries, pistachios & feta,

  4. Slice or shred chicken & add to top of salads.

  5. Drizzle 2 Tbsp. dressing onto each salad just before serving/eating.

TIPS:

  • All ingredients can be prepped ahead of time & assembled just before eating if enjoying at home or packing a lunch for your day.

  • I recommend adding dressing just before eating rather than ahead of time to keep salad greens fresh & crisp.

  • If you want an extra serving of carbs with your salad, try these Herb Ranch Roasted Potatoes on the side or right in the salad!

  • Eliminating added sugars? Simply make the dressing without maple syrup! It’s a little more tart, but just as delicious!
