Herb Ranch Roasted Potatoes

So many of you loved this seasoning mix!

And I’m about you show you my latest obsession using this simple spice mix! If you’ve been on my IG at all lately, you’ve probably noticed I’ve been on a biggg salad kick — with a side of these steamy, delicious roasted potatoes. Yeah, I am digging salads lately, but your girl needs some carbohydrate with all that veg to stay full & happy for longer!

Enter roasted potatoes. Call me crazy, but these potatoes have upped my salad game for weeks now. And not JUST my salad game — my starchy side game! We eat these crispy, garlicky, herb-y potatoes all week long with burgers, salmon, for breakfast & everything in between. Meal prep win of the year goes to this recipe HANDS DOWN.

Herb Ranch Roasted Potatoes

Prep Time: 10 minutes
Cook Time: 40 minutes
Servings: 5

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 425 deg. F.

  2. Optional: Cover a large baking sheet with tin foil. *I do this to avoid needing to clean the pan afterwards!

  3. Wash & dry potatoes prior to cutting.

  4. Dice potatoes into 1/2 - 3/4 inch cubes & place in a medium size mixing bowl.

  5. Over potatoes, drizzle the olive oil & sprinkle the herb seasoning.

  6. Mix with a spatula until potatoes are evenly coated in seasoning.

  7. Spread potatoes evenly on the baking sheet in a spaced out, one layer.

  8. Bake for 40 minutes, or until starting to brown & crisp up.

  9. Remove from oven to cool.

  10. Store in an airtight container in the refrigerator for 7-10 days.
