I’ve done it too! Munching on cookie dough while baking up a batch of cookies should be an official instruction in all cookie recipes. But I’ll do you one better….
This recipe is alllllllll dough, no baking, AND it’s egg-free, so no need to stress over eating it raw! This Sugar Cookie Dough Bite recipe is perfect when you just need a quick sweet bite, that isn’t sugar packed, has a little protein, and just tastes dang delicious. I used coconut butter (or coconut manna) as the base, along with almond flour, which magically makes the most dough like textured bites of all time. Whether you’re cooking up a tray of cookies and need a vegan, gluten free, low-sugar option — or you want quick snacks to satisfy that sweet tooth, this recipe is a must!

Sugar Cookie Dough Bites
Prep Time: 20 min
Servings: 16 bites
INGREDIENTS
1/2 c almond flour
1/2 c coconut butter (manna)
1/4 c maple syrup
1/4 c coconut oil
1/2 tsp vanilla extract
*Optional: 1 serving collagen peptides (I used Vital Proteins)
*Optional: decorative sprinkles
INSTRUCTIONS
In a medium mixing bowl, combine almond flour, coconut butter, maple syrup, coconut oil, vanilla extract, and peptides, if using them.
Stir with a spatula to combine into a thoroughly mixed dough.
Using your hands, break dough into approximately 1 inch sized bites, and roll into balls.
Dip or roll in decorative sprinkles, if choosing to do so.
Store in the fridge for 7-10 days!
