Chicken Sausage Sweet Potato Sheet Pan Meal

Need a quick meal from your work week? Look no further! This chicken sausage sheet pan meal couldn’t be simpler — but more importantly, it’s filling, tastes delish, and you can switch things up to keep it interesting!

I used a savory Italian herb chicken sausage for my version here, but if you prefer apple chicken sausage, a spicy version, or literally any other type — sub it in! You can also swap out the veggies to keep things interesting when you use this recipe again and again, because I know you will!

Chicken Sausage Sweet Potato Sheet Pan Meal

Prep Time: 10 min
Cook Time: 35 minutes
Servings: 4

INGREDIENTS

  • 1 lb. chicken sausage (precooked or raw)

  • 2 lbs. sweet potato

  • 4 c broccoli florets

  • 1 tbsp. avocado oil

  • 2 tsp. Herb Ranch Seasoning Mix

INSTRUCTIONS

  1. Preheat oven to 400 deg F.

  2. Coat a large baking pan with oil spray and/or line with tin foil.

  3. Slice chicken sausage into 1/2 inch thick rounds. *If using raw chicken sausage, boil in a pot of water for 20 minutes before slicing.

  4. Evenly spread sliced sausage on the sheet pan.

  5. Wash sweet potatoes and then cut into bite sized cubes. Place in a large mixing bowl.

  6. Add broccoli florets, avocado oil, and herb seasoning mix into the mixing bowl with the sweet potatoes. Toss to coat evenly with oil and seasoning.

  7. Pour broccoli and sweet potatoes onto the baking sheet and evenly spread out.

  8. Roast in the oven for 35 minutes. Shift around the sausage, broccoli, and sweet potatoes on the pan 20 minutes through for even browning and cooking.

  9. Remove from the oven.

  10. Divide into 4 containers and store in the refrigerator for 5-7 days.
