Spaghetti Squash Boats

Spaghetti Squash Boats

Prep Time: 10 min
Cook Time: 45-60 minutes
Servings: 4

INGREDIENTS

  • 1 large spaghetti squash

  • 1 lb. ground beef or turkey

  • 2 medium zucchini

  • 6-8 baby portabella mushrooms

  • 1 1/2 c marinara sauce. I used Muir Glen brand

  • 1/2 c parmesan cheese, shredded

  • 2 Tbsp. olive oil

INSTRUCTIONS

  1. Preheat oven to 400 deg F.

  2. Cut spaghetti squash into quarters.

  3. Using the olive oil and a culinary brush, brush oil onto the squash quarters.

  4. Flip flat side down onto a baking sheet.

  5. Roast in the oven for 30 minutes.

  6. While squash is roasting, heat a large pan over medium heat.

  7. Pour remaining olive oil into pan to heat.

  8. Chop zucchini and mushroom into small pieces. *If you like a chunkier sauce, leave chop into quarters. If you like a more uniform sauce, chop smaller.

  9. Add chopped vegetables into the pan and cook for 3-5 minutes.

  10. Add ground beef or turkey into pan and cook until browned and cooked through.

  11. Pour marinara over the vegetables and ground meat. Stir and cook thoroughly. Remove from heat.

  12. Remove the squash from the oven and allow to cool slightly.

  13. Scrape the insides of the squash quarters with a fork until all of the squash resembles stringy spaghetti.

  14. On top of each squash quarter, add 1/4 of the vegetable and meat mixture.

  15. Top with parmesan cheese.

  16. Store in the refrigerator for 5-7 days.

Simple Swaps

  • Need more carbs? Add 1/2 cup of cooked pasta into your spaghetti squash boat.

  • Want less fat? Use a leaner meat! In this recipe, I used 90/10 ground beef for nutritional info.

  • Want different veggies?? Add in whatever you like!
