Short. Sweet. & to the point… These cookies are gluten-free, dairy-free, and can be any kind of PBJ you want (who’s team raspberry??). Whip together this less than 10-ingredeint, 1 bowl recipe for deliciousness & sink into the nostalgia of the flavors of your childhood.

PB&J Thumbprint Cookies

Prep Time: 10 min
Cook Time: 15 min
Servings: 12 cookies

INGREDIENTS

  • 1 c almond flour

  • 2/3 c peanut butter, creamy

  • 1/3 c maple syrup

  • 1/4 tsp. baking powder

  • 1/2 tsp. vanilla extract

  • 1 tsp. cinnamon

  • 1/4 c jam of choice

INSTRUCTIONS

  1. Preheat oven to 350vdeg F.

  2. Combine all ingredients (except the jam) in a medium mixing bowl until one cohesive mixture.

  3. Roll into 12 balls of dough and place on a lined baking tray.

  4. Smash balls into small rounds with your hands.

  5. Create a small “dip” in the dough with the back of a spoon or your thumb.

  6. Bake for 10 minutes.

  7. Remove from oven and add 1-2 tsp jam into each “dip” to fill.

  8. Bake for 3-5 more minutes.

  9. Allow to cool completely & store in the fridge!
