Short. Sweet. & to the point… These cookies are gluten-free, dairy-free, and can be any kind of PBJ you want (who’s team raspberry??). Whip together this less than 10-ingredeint, 1 bowl recipe for deliciousness & sink into the nostalgia of the flavors of your childhood.

PB&J Thumbprint Cookies

Servings: 12 cookies
INGREDIENTS
1 c almond flour
2/3 c peanut butter, creamy
1/3 c maple syrup
1/4 tsp. baking powder
1/2 tsp. vanilla extract
1 tsp. cinnamon
1/4 c jam of choice
INSTRUCTIONS
Preheat oven to 350vdeg F.
Combine all ingredients (except the jam) in a medium mixing bowl until one cohesive mixture.
Roll into 12 balls of dough and place on a lined baking tray.
Smash balls into small rounds with your hands.
Create a small “dip” in the dough with the back of a spoon or your thumb.
Bake for 10 minutes.
Remove from oven and add 1-2 tsp jam into each “dip” to fill.
Bake for 3-5 more minutes.
Allow to cool completely & store in the fridge!
