Peanut Butter Pumpkin Bites

IT’S FALL YA’LL!

If you’re a fall fan, a peanut butter fan, and/or a pumpkin fan… This is the snack for you! It’s October so I OFFICIALLY feel like it’s pumpkin recipe season! Here is the first one to hit you from the blog in a while, and you won’t be disappointed!

I made these little bites for a wellness event at Fierce 45, a locally owned pilates studio company here in the Denver-metro area that I am honestly obsessed with! Not only do they offer a kick-ass 45 minute workout that is challenging every dang time, but they support the health & wellness of their clients! Thus, events like this! I had the absolute pleasure of spending a Saturday in the studio with some other local vendors and chat with the amazing men & women attending the classes about nutrition, exercise, fall, pumpkin, and shaking like a dang leaf on the reformer! You guys, I was in total heaven. For such an exciting event I wanted to (obvi) bring a snack, as always, but I wanted something new and a little seasonal! Enter these delicious, creamy, filling, healthy, balanced, Peanut Butter Pumpkin Bites.

You guys, I am not messing around when I say that people were coming back for another one (or two) of these bad boys. Not only do they embrace the pumpkin spice season we’re in, but hello… It’s peanut butter AND there are mini chocolate chips!

A couple of these bites make a great quick-grab, pre-workout snack, middle of the day sweet-tooth-satisfier, or weekend hiking munch. Want to up the protein for post-workout? Add in some collagen peptides into the mix! They blend right in and don’t muck up the texture!

Okay, I know you’re in and like, “helloooo, can we get to the goods so I can get to snackin’?!” Well here it is! A simple 7 ingredient recipe, that’s ready in 20 minutes and keeps your fridge stocked with snacks for the week!

Peanut Butter Pumpkin Bites

Prep Time: 20 min
Servings: 40 bites

INGREDIENTS

  • 2 c quick oats

  • 1/2 c creamy peanut butter

  • 3/4 c pumpkin puree (not pumpkin pie filling!)

  • 1/3 c maple syrup

  • 1/4 c flaxseed meal

  • 2 tsp. pumpkin spice seasoning

  • 1/2 c mini chocolate chips

INSTRUCTIONS

  1. In a medium mixing bowl, combine the oats, peanut butter, pumpkin puree, maple syrup, flaxseed meal, and pumpkin spice seasoning. Mix together by hand with a spatula until one cohesive mixture.

  2. Fold in the mini chocolate chips until evenly dispersed.

  3. Pop the mixing bowl into the refrigerator for 5-10 minutes to let the mixture come together.

  4. Remove from the fridge and use hands to scoop and roll mixture into bite sized balls (approx. 1 inch in diameter).

  5. Store in an air-tight container in the fridge for up to 7 days, or toss in the freezer for longer storage.

  6. Enjoy!

ARE YOU ONE IN A MILLION?

Okay, now that the pumpkin lovers have their dream snack recipe… Are you the person who just CAN’T stomach another pumpkin spice flavored ANYTHING?! I don’t understand you, but I’m here for you.

These bites are just as dang good without that pumpkin puree! If you want to opt for a pumpkin-free version — go for it! Just skip the puree and add 1/2 cup less oats. The nutrition facts will be a little different than those I’ve given here, but your bites will be delicious and fit JUST. FOR. YOU!
