Oatmeal M&M's Cookies

COOKIES ARE A FULL ON FOOD GROUP DURING THIS TIME OF YEAR!

I don’t know about you, but I am not one to turn away a fully decked out plate of Christmas cookies! Not only are cookies… umm delicious… but I just love the colors & creativity that seems to come out only around the holidays!

Holiday season can also be one of over-indulgence & it’s never a bad thing to have a healthy option at the table! This year these Oatmeal M&M cookies are my contribution to the sweet-but healthy-but also delicious- but also still healthy side of the table!

These cookies have 8 GRAMS OF PROTEIN in them - I mean, talk about a holiday health food! And they don’t taste like those packaged protein cookies you can buy at the store. These are the real deal! As always these are 100% gluten-free (buy certified GF oats if you have a severe allergy), and can be made dairy free if you opt for a dairy-free chocolate candy instead of the classic M&M’s! These cookies are the perfect balance between bringing a healthy option, but still bringing along the holiday spirit!

Oatmeal M&M’s Cookies

Prep Time: 5 minutes
Cook Time: 12-14 minutes
Servings: 12

INGREDIENTS

  • 1 c quick oats

  • 3/4 c almond flour

  • 1/4 c flaxseed meal

  • 2/3 c almond butter, smooth

  • 1/2 c maple syrup

  • 1/4 c unsweetened applesauce

  • 1 whole egg

  • 1 tsp. vanilla extract

  • 1 tsp. baking powder

  • 1.5 servings protein powder, I used Vital Proteins Collagen Peptides

  • 1/4 c M&M’s *Option to mix in, or decorate on top of cookie

INSTRUCTIONS

  1. Preheat the oven to 350 deg. F.

  2. In a medium mixing bowl combine oats, almond flour, flaxseed meal, almond butter, maple syrup, applesauce, egg, vanilla extract, baking powder, and protein powder. Mix until one cohesive mixture.

  3. Option to add in M&M’s candies and gently fold them evenly into the batter. Other wise, leave candies to add later.

  4. Using your hands, roll cookie dough into approximately 1 inch dough balls, and place onto a lined (foil, parchment, or silicone) baking sheet. Place each cookie dough ball 2 inches apart on the tray.

  5. Gently flatten the cookies into rounds. *Leave thicker for a chewier cookie, or thinner for a crisper cookie!

  6. If you chose to not mix in the M&M’s, place 4-5 candies onto the top of each cookie & gently press in to stick.

  7. Bake for 12-14 minutes depending on crispness desired (longer cooking time for a crisper cookie).

  8. Remove from oven & allow to cool completely on a cooling rack.

  9. Store in an airtight container for 1 week!
