Apple Chicken Sausage & Sweet Potato Hash

I AM HERE FOR BREAKFAST MEAL PREP!

Who doesn’t want to save 10-15 minutes in the morning?? Hellooo, we would all love a little more sleep in the AM, especially now that the weather is finally plummeting into true wintery temps…. I know I don’t want to leave my bed when it’s below freezing! But here’s the good news, I’ve got a meal prep-able breakfast dish that is quick, simple & a total time saver for your weekday mornings!

I’ve always been a chicken apple sausage fan. The sweet/savory combo is delish & something that breakfast is begging for! I picked up a pack of these sausages at Costco (thank you Costco for quick, convenient, bulk items), was able to use what I needed for the week & just freeze the rest! In testing this recipe & taking the photos… My husband was ALL IN on taste testing. Great news — it’s husband approved!

This meal is hearty, warming, filling, but still super simple, quick & only takes ONE PAN to cook! Chop it all up, toss it in the oven & move on with your to-do list for the day! I’m not here to keep you meal prepping all day! let’s keep it short & sweet and sooooo tasty to eat!

Apple Chicken Sausage & Sweet Potato Hash

Prep Time: 10 min
Cook Time: 30-40 min
Servings: 4

INGREDIENTS

  • 2 large sweet potatoes

  • 4 chicken & apple sausages

  • 2 large granny smith apples

  • 4 eggs, whole

  • 1 tbsp. olive oil

  • 1 tsp. garlic powder

  • salt & pepper

INSTRUCTIONS

  1. Preheat the oven to 375 deg. F.

  2. Wash/scrub sweet potatoes & cut into small cubes.

  3. Place cut sweet potatoes in a medium mixing bowl, add olive oil & garlic powder. Toss until thoroughly coated. Evenly spread sweet potatoes onto a tin foil or parchment lined baking tray. Bake for 10 minutes.

  4. While potatoes are baking, dice apples into small cubes.

  5. Slice sausages into coins. *Optional to slice again into half crescents.

  6. Remove sweet potatoes from the oven, stir on the pan, then add apple & sausage pieces to the pan. Spread out evenly in the pan.

  7. Bake for another 20-30 minutes until desired doneness. *Longer cooking time for crispier potatoes & softer apples.

  8. While the hash mix is baking. Cook the eggs in a small skillet as desired! (I love an over-medium, while my husband favors scrambled!)

  9. Remove hash mix from the oven & allow to cool.

  10. Serve each portion with one egg, or divvy up into meal prep containers.

  11. Optional: If you like a runny yolk with your eggs, you can prep the hash & then cook your eggs in the morning before eating!
