Orange Cranberry Bread

I love a good sweet treat for breakfast & this recipe is just the right kind of balance for satisfying that sweet tooth without feeling overindulged. This light, flavorful snacking bread is perfect for a quick Christmas morning breakfast or a festive snack for throughout the day.
This flavorful treat ready in about 30 minutes, has only 9 ingredients, is gluten-free & can easily be made vegan by using a flax egg instead of whole eggs.
Orange Cranberry Bread
Prep Time: 5 minutes
Cook Time: 25-30 minutes
Servings: 12 slices
INGREDIENTS
2.5 c Bob’s Red Mill all-purpose gluten-free flour
1/4 c coconut oil
2 eggs, whole
2/3 c maple syrup
1 c unsweetened almond milk
1/4 c orange juice
1 c cranberries, fresh
1/2 tsp. vanilla extract
zest from 1 orange
INSTRUCTIONS
Preheat the oven to 350 deg. F.
In a medium mixing bowl combine flour, coconut oil, maple syrup, eggs, almond milk, orange juice & vanilla extract. Mix thoroughly until one cohesive batter.
Fold in fresh cranberries & orange zest.
Into a lined or coconut oil coated bread pan, pour the batter. Spread evenly.
Bake for 25-30 minutes, or until top is golden brown. *Test with a cake tester. Will come out clean when done baking.
Remove from the oven & allow to cool completely in the pan before removing.
Using a butter knife, loosen the edges of the loaf to remove from the pan.
Slice into 12 equal slices.
Wrap & store in the refrigerator, or serve right away!
