BBQ Chicken Salad with Summer Corn & Zucchini

It’s my bestie’s birthday this week & I’m celebrating with this new recipe as a homage to her fave meal — anything BBQ chicken! Seriously, it doesn’t matter where we go, if that menu has a BBQ chicken salad, pizza, whateverrrr on it… she’s getting it! And I love it. I whipped up this special summer salad with some quick cooked summer corn & zucchini to dress it up a bit & add my own twist on this classic.
Not only is this salad full of late-summer flavor, but it’s filing & totally meal-preppable! I love meal prepped salads — get the components prepped & in the fridge over the weekend, all you have to do it toss it all into your dish for the day & you’re off! It makes planning for a day well eaten soooo much simpler!

BBQ Chicken Salad with Summer Corn & Zucchini
Prep Time: 15 minutes
Servings: 4 servings
INGREDIENTS
1/2 head romaine lettuce (approx 8 cups), chopped
1/2 batch Instant Pot BBQ Chicken
1 ear sweet summer corn, fresh
1 large zucchini
2 medium roma tomatoes, diced
1 medium avocado, diced
4 oz. white cheddar cheese, small cubed
1 Tbsp. avocado oil
INSTRUCTIONS
*Prep Instant Pot BBQ Chicken ahead of time!
Warm a pan over medium heat. Add avocado oil into the pan.
Cut the corn away from the cob & break into small chunks/individual kernels. Add into pan.
Chop zucchini & add into the pan.
Cook for 8-10 minutes until starting to brown & cook through.
While corn & zucchini are cooking, add the chopped romaine, diced tomato, diced avocado & cubed cheese into a bowls (or tupperware if prepping for later). Arrange as desired.
Reheat BBQ chicken & add 4 oz. portion into salad bowls.
Top salads with corn & zucchini mixture. *If meal prepping, cool corn & zucchini before topping into salads
Serve Immediately or store in refrigerator for later.
