30-Minute Curry Shakshuka

Brunch is heating up over here!

Mixed up my brunch routine this last weekend & it did not disappoint! I used to hit up a local brunch place in college most weekends that I could stand to wait in line for an hour or more because good gluten-free breakfast/brunchy meals are hard to come by! Well, not anymore!

I love recreating my favorite meals out in my own kitchen — and this one was my go-to fall menu order every time it popped back on the menu. The way they served it, it was kind of a veggie ratatouille, squash heavy with a rich tomato sauce. I put my own spin on this one by adding curry paste & turmeric for some extra warm spice!

30-Minute Curry Shakshuka

Cook Time: 30 minutes
Servings: 2 servings

INGREDIENTS

  • 1 can petite diced tomatoes

  • 1 medium zucchini, quartered & sliced

  • 1 red bell pepper, diced

  • 1 shallot, minced

  • 2 cloves garlic, minced

  • 2 Tbsp. red curry paste

  • 1 tsp. turmeric

  • 1 Tbsp. avocado oil

  • 1/4 cup green onion, chopped

  • 4 eggs

INSTRUCTIONS

  1. Preheat your oven to 360 deg. F.

  2. In a medium skillet pan, heat avocado oil over medium heat.

  3. Add minced shallot, ginger & garlic into the pan. Cook for 3-5 minutes until shallot becomes translucent.

  4. Add diced bell pepper & sliced zucchini into the pan. Cook an additional 3-5 minutes.

  5. Pour can of petite diced tomatoes over the vegetables in the pan.

  6. Add in curry paste & turmeric. Stir until cohesively mixed throughout.

  7. Using a spatula or spoon, dig 4 wells into the tomato/vegetable mixture.

  8. Crack 1 egg into each of the 4 wells you’ve created.

  9. Move skillet into the oven & bake for 16-20 minutes. *Depending on how you like your eggs cooked; 20 minutes for almost solid yolks.

  10. Carefully remove the pan from the oven. Allow to cool slightly before serving.
