Mango Avocado Salsa

Fresh salsas are where it’s at!

Need a change from your traditional tomato salsa? How about a sweet & smooth avocado salsa? Imagine that a mango margarita & guac got together to create the ultimate chip topper – well here it is!

Salsa is by far one of my favorite condiments to add into any type of meal & this one is a new house favorite! Whether it’s for chip dipping or throwing over fish, nothing beats a good fruit salsa. One of my husbands favorite fruits are mangoes, so making a salsa to keep on hand & keep our meals fresh that included it was a no brainer for me.

Homemade salsas are a great way to add flavor, spice, freshness & extra nutrients into any dish you’re whipping up. I made this over the weekend and will probably use it all week long to break up our usual weeknight meal rotation.

Mango Avocado Salad

Prep Time: 10-15 minutes
Servings: 8 servings

INGREDIENTS

  • 2 large or 4 small avocados

  • 1 red mango

  • 1/4 c green onion, diced

  • 1/4 c fresh cilantro, rough chopped

  • 1/2 jalapeño

  • 1 lime, juice & zest

  • salt

INSTRUCTIONS

  1. On a large cutting board, cube the avocados & mango. Place cubes into a medium mixing bowl.

  2. Into the mixing bowl add the dived green onion & chopped cilantro.

  3. Dice the jalapeno after removing the seeds as desired. *Less seeds + less spice! Add into the mixing bowl.

  4. Zest the lime into the mixing bowl, slice in half & then juice the lime into the bowl as well.

  5. Using a spatula or large spoon, gently fold the mixture together until everything is evenly dispersed. *If you want the texture a little closer to a guacamole, mash the avocados as you mix to the desired texture.

  6. Sprinkle salt to taste.

  7. Serve as is or place into a serving bowl.
