Banana Walnut Chocolate Chip Muffins

That’s a mouthful! And you’ll want a mouth FULL of these banana muffins!

You simply can’t go wrong with a good banana muffin — so here’s a quick recipe to whip up for weekend mornings, weekday morning meal prep, or a whole food snack moment. PLUS it has chocolate, so — it’s even better!

Of course I packed these baked breakfast bites with some filling nutrition in the form of whole grains, healthy fats, and even a punch of protein — totally optional, but I added some unflavored collagen peptides to round out these muffins into a stand alone meal or snack that will satisfy that baked good craving, balance your blood sugar, and keep you full!

Banana Walnut Chocolate Chip Muffins

INGREDIENTS

  • 1 c almond flour

  • 1 c quick oats

  • 1/2 c gluten-free all-purpose flour, I used Bob's Red Mill brand

  • 1/4 cup flaxseed meal

  • 2 tsp. baking powder

  • 2 tsp. cinnamon

  • 1/4 c maple syrup

  • 1/2 c unsweetened almond milk

  • 1 egg, whole

  • 1 tsp. vanilla extract

  • 3 bananas, overripe

  • 1/2 c chocolate chips

  • 1/2 c walnuts, chopped

  • Optional: 3 scoops collagen peptides, I used Vital Proteins

INSTRUCTIONS

  • Preheat the oven to 350 deg. F.

  • In a large mixing bowl, add bananas, almond milk, maple syrup, egg, and vanilla.

  • Using a fork, mash bananas and whisk together with liquid ingredients.

  • Add the dry ingredients (almond flour, oats, gluten free flour, flaxseed meal, baking powder, spices, and collagen peptides if using) and mix together until completely combined into a cohesive batter.

  • Fold in chopped walnuts and chocolate chips.

  • Using a 1/4 measuring cup, scoop the batter into a greased or lined muffin tin.

  • Bake for 14 minutes. Test with a cake tester before removing from the oven. Add an addition 2-3 minutes as needed.

  • Allow to cool before removing from the tin and serving.

  • Store in the refrigerator for up to 2 weeks.

Make it vegan:

  • Sub a flax egg or other vegan egg substitute.

  • Use a dairy free chocolate chip brand, such as Enjoy Life.

Make it grain free:

  • Instead of gluten-free flour, sub in additional almond flour.
