Baked Goat Cheese Pasta
Tik tok trend, but… add a little spice, or herbs!
Baked cheese pastas have been blowing up over the last couple of months - you know you’ve seen that baked feta dish a million times. Maybe you’ve tried it, maybe you love it! Well I’m bringing you my own twist on this internet sensation.
I’m using goat cheese as the magic maker in this dish — first of all, my husband doesn’t care for feta, so using a different cheese was the only way I could try this recipe out on him, but I am 10/10 a fan of how this turned out! I also didn’t just use any ol’ plain goat cheese, no, we went big with this one and picked an herbed roll of cheese for an extra flavor factor which I wanted to keep going even after this was baked, so I added fresh parsley as well.

Baked Goat Cheese Pasta
Prep Time: 5 min
Servings: 2-3
INGREDIENTS
4 oz. herbed goat cheese
2 c grape tomatoes, halved optional
2 Tbsp. olive oil.
2 c leafy greens of choice (i.e spinach, mixed greens, kale)
1/4 c fresh parsley, chopped
2 cloves garlic, minced
6-8 oz. dry pasta of choice, I used Jovial Penne Rigate
salt & pepper
INSTRUCTIONS
Preheat the oven to 350 deg F.
In a medium oven safe dish, add your block of herbed goat cheese to the center.
Add halved tomatoes around the block of cheese.
Drizzle with olive oil and sprinkle with salt and pepper.
Bake for 35 minutes or until cheese starts to melt and the tomatoes are caramelized.
While the cheese is baking, cook pasta as directed on the box. Rinse and drain.
Pull the cheese and tomatoes from the oven.
Into the dish add the greens, fresh parsley, minced garlic, and the cooked pasta.
Use a spatula to gently stir everything together, coating everything with the melted cheese & evenly dispersing the herbs, greens, and tomatoes.
Serve immediately.
