Sticky Sesame Edamame

Apples & nut butter are dominating the plant based/gluten free snack space & it is time to try something new! I love trying out new afternoon snacks that are quick to pack for my work day, or ready in the fridge for chillin’ on the weekend. These Sticky Sesame Edamame are the perfect quick grab for any and all snack occasions!

Soy beans (aka edamame) get a lot of flack for whether or not they’re actually “healthy.” Men are afraid of the phytoestrogens, women are afraid of the impact on risk for breast cancer — so let’s break it down a bit.

Here are 3 things to consider when eating soy:

  1. Is it a whole soy product or a processed additive? Like these whole soy bean pods, eating a food straight from the source (aka as close to it’s natural form as possible) is the best way to reap all the health benefits from the food!

  2. It’s packed with protein! Just like other legumes, soy beans are a great source of plant base, vegetarian/vegan protein, which when picking a sustaining snack for your afternoon is a sure bet to keep your blood sugars in check & your hunger satisfied.

  3. The science isn’t clear. There are a lot of studies looking at the health benefits vs. health harm of eating soy products — but nothing is conclusive

So whether you’re vegan or not — these sticky little snacks are a great way to switch up your afternoon snack for the week!

Sticky Sesame Edamame

Cook Time: 20 minutes
Servings: 4

INGREDIENTS

  • 2 1/2 c edamame pods

  • 3 Tbsp. tamari (gluten free soy sauce)

  • 1 Tbsp. sesame oil

  • 1 Tbsp. rice wine vinegar

  • 2 tsp. sesame seeds

INSTRUCTIONS

  1. Heat a large skillet over medium high heat.

  2. Add in tamari, sesame oil, and rice wine vinegar to allow to heat.

  3. Toss in edamame into sauce & allow to coat completely.

  4. Cook for 5-10 minutes until sauce becomes sticky & coated to the edamame pods.

  5. While pods are cooking, heat a small pan to medium heat & add in sesame seeds.

  6. Toast sesame seeds, stirring every 1-2 minutes, for 5-6 minutes until golden brown *Keep a close eye on these as they can burn quickly.

  7. Sprinkle toasted sesame seeds onto edamame pods & stir together.

  8. Serve immediately or store in refrigerator for up to 1 week. Can be served warm or cold!
