Spring Chia Seed Pudding Dirt Cups
I simply love the nostalgia of the classic dirt cup. For Earth Day, and with spring coming in full swing this week - we’re making a Spring version of this sweet treat.
I’ve made a chia seed pudding version of dirt cups for Halloween before (find them here), but this felt like such a fun twist for the change in season.
This recipe remains just as simple as your classic dirt cup, but adds in high protein and fiber for a filling, satisfying, healthy version of the classic.
Spring Chia Seed Dirt Cups
Servings: 1-2
Prep Time: 5 minutes (with overnight rest)
Ingredients:
1.5 cups strawberries
1/2 cup cottage cheese
2 tbsp chia seeds
1 serving vanilla protein powder
1-2 Tbsp maple syrup
1/2 tsp vanilla extract
1 cup milk of choice
2 Tbsp. crushed graham crackers (use gluten free if needed)
*Optional: edible flowers for decoration
Details:
In a high speed blender of food processor, add strawberries, cottage cheese, chia seeds, protein powder, maple syrup, vanilla, and milk. Blend until smooth.
Pour mixture into sealable containers of your choice and refrigerate for at least 4 hours, ideally overnight.
When ready to eat or serve, crush graham crackers into a powder.
Top your chia seed pudding with 1 Tbsp crushed graham crackers.
Place an edible flower, or fun spring decoration of choice into the top of the graham cracker “dirt.”
