Chocolate Chia Seed Dirt Cups
Who remembers these creepy-crawly snacks?!
I loved dirt cups growing up! Snack Pack pudding was my jam, and the more cookie crumbles the better! These little dessert cups were such a fun way to get festive around spooky season and have been on my mind as Halloween creeps closer!
If you grew up with a Snack Pack habit too, well then welcome to your fave dirt cups all grown up! I mixed up this tasty dessert cup that reminds me of childhood, but is made with whole food ingredients and a little more nutritionally conscious. Chia seeds are little powerhouses for healthy fats, fiber, and work like a dream for creating a pudding-like mixture! Depending on how thick you like your pudding, you can adjust a little in this recipe to fit your preference, but the longer they set, the thicker they will get as well.
The toppings I used here can also be swapped around for whatever you like your dirt cups filled with! These have a more “ocean floor” vibe with the sweet fish from Smart Sweets, but worms, bears, whatever you like, can create the spooky vibe you're going for! I chose to use Smart Sweets to cut down on the sugar content a bit, plus I am just loving this Swedish Fish alternative right now! If you don’t need to keep the recipe gluten free, feel free to swap in Oreo’s or some other cookie — but for those of us who like our dirt sans-gluten, Glutino cookies really do the trick!

Chocolate Chia Seed Dirt Cups

Servings: 6
INGREDIENTS
1 1/2 c unsweetened almond or oat milk
1/3 c chia seeds
1/4 c cacao powder
1/4 c maple syrup
1 tsp. vanilla extract
4 gluten free cookies (I used Glutino brand)
Gummy candies of choice (I used Smart Sweets Sweet Fish)
INSTRUCTIONS
In a large mixing bowl, combine milk, chia seeds, cacao powder, maple syrup, and vanilla.
Whisk until thoroughly combined.
Pour mixture into 4 small jars and refrigerate for at least 1 hour.
Prior to serving, crush cookies in a resealable bag, like a Stasher Bag.
When ready to serve, sprinkle cookies over chia seed pudding. Add gummy candies as decorative as you like!
Serve and enjoy!
