Simply Smores Brownies

Is there anything cozier than s’mores?!

I love warm, delicious treats when the weather cools down — the combo of melted chocolate and toasted marshmallows is just too good to pass up! I’ve never been one for camping… but I’ll take this indoor, cozy version of this classic snack any day! I mean, s’mores are a class all year round in my opinion!

I used one of my favorite gluten free baking brand, Simple Mills, for the base of these gooey, deeply chocolatey brownies! I love how simple (duh) their ingredients are, they’re minimally processed and are all real food — which you know I love. I also used Dandies vegan marshmallows, which I think taste GREAT if you need/want a vegan option, but don’t expect the same melt-factor as your classic minis.

Other swaps you can make to make these brownies vegan friendly:

  • dairy free chocolate chips

  • flax-egg instead of eggs

Serve a la mode with some ice cream (dairy free or not) or serve on their own — there babies don’t need much back up to be delicious!

Simply S’mores Brownies

Prep Time: 10 min
Cook Time: 20 min
Servings: 16

INGREDIENTS

  • 1 box Simple Mills Brownie Mix

  • 1/3 c coconut oil, melted

  • 1/4 c water

  • 2 eggs

  • 1/2 c dark chocolate chips

  • 2 c mini marshmallows

  • 1/3 c almonds, chopped

INSTRUCTIONS

  1. Preheat the oven to 400 deg. F. *Heat to 350 deg. if using a glass pan.

  2. In a large mixing bowl, combine brownie mix, melted oil, water and eggs. Mix to combine.

  3. Pour batter into a greased 9x9 pan.

  4. Bake for 18-20 minutes.

  5. Remove from the oven.

  6. Sprinkle 1/4 c of the chocolate chips onto the baked brownies.

  7. Cover top of brownies with mini marshmallows and chopped almonds.

  8. Turn oven to low broil and put brownie pan back in the oven.

  9. Broil for approximately 2 minutes or until marshmallows are toasted to your preference. *Keep a close eye on them!!

  10. Remove brownies from oven to cool.

  11. In a small microwave safe bowl, melt remaining chocolate chips in 30 second increments until completely melted.

  12. Drizzle chocolate over the brownies.

  13. Allow to cool completely before slicing and serving!
