Coconut Almond Apple Crisp

Simple, sweet, and ready for year-round baking!

This simple dessert is perfect for holiday dinners, summer parties, and everything in between! Not only is it simple to throw together — but depending on the type of apples you use, you can literally make it all year! I chose honey crisp apples for this recipes because I love the slightly sweet, balanced tart flavor they have and think it really rounds this dessert — without going overboard on the sweet-factor!

I didn’t want to call this a “healthified” apple crisp, because I don’t think there is anything wrong with baking a family classic, adding butter into a crumble topping or using whatever sugar you have at home. This crisp is simply made with real food, whole ingredients to keep the highly-processed ingredients to a minimum.

I think my favorite part of this recipe is the crumble — it’s delicious, crunchy, and a little spicy with cinnamon and ginger. I would honestly eat the crumble plain or on top of literally anything! I think you’re going to love this one too.

Coconut Almond Apple Crisp

INGREDIENTS

For Filling

  • 3-4 large honey crisp apples

  • 3 Tbsp. maple syrup

  • 2 Tbsp. coconut oil, melted

  • 1 Tbsp. lemon juice

  • 2 tsp. cinnamon

  • 1 tsp. ginger, fresh or ground

  • 1 tsp. vanilla extract

For Crumble

  • 1/2 c rolled oats

  • 1/2 c coconut chips, unsweetened

  • 1/2 c almonds, raw

  • 3 Tbsp. flaxseed meal

  • 1 tsp. cinnamon

  • 1/2 tsp. ginger, fresh or ground

  • 2 Tbsp. coconut oil, melted

  • 2 Tbsp. maple syrup

INSTRUCTIONS

  1. Preheat the oven to 350 deg. F.

  2. Thinly slice apples and place in a large mixing bowl.

  3. In a small mixing bowl, add maple syrup, coconut oil, lemon juice, cinnamon, ginger, and vanilla for the filling. Whisk to combine.

  4. Pour liquid mixture over sliced apples and gently stir to coat apple slices.

  5. Scoop apple slices into a 9-inch round or square baking dish.

  6. In a food processor or high-speed blender, add all topping ingredients - oats, coconut, almonds, flaxseed meal, cinnamon, ginger, coconut oil, and maple syrup.

  7. Pulse in the food processor/blender until all items are crumbled and uniform in size. If you prefer a chunkier crumble, pulse for less time! Mixture should slightly stick together.

  8. Top apples in the baking dish with the topping. Pat down as need and cover evenly.

  9. Bake for 30-40 minutes. Depending on oven and baking altitude, this may vary.

  10. Remove from oven and cool.

  11. Serve immediately or cool before serving.
