Girl's Day Grapefruit Salad with Lime & Mint

THIS ONE IS FOR THE GIRLS… AND EVERYONE WHO LOVES A GOOD FRUIT SALAD!

I love bringing a healthy dish to any kind of get together, and a girl’s brunch with one of my good girlfriends was exactly the inspo I needed to put together this beautiful, girly, PINK salad!

Grapefruits have never been a “top of the list” fruit for me, but now I think I’m HOOKED! The store down the street had them on crazy sale, so it was a no-brainer to build a healthy brunchy side dish with this citrus fruit as the star.

When you think of a fruit salad, you probably picture the apple/kiwi/banana/orange combo, right? Fruit salads can be SUCH a great addition to a brunch table… but I wanted to spoil my girlfriends & put together something a little special. I wanted to create a salad that was antioxidant rich, hydrating, nourishing & obviously IG worthy. Between the grapefruits, pomegranate & double dose of berries, this is a salad that sparks joy for the eyes, taste buds & your health!

Grapefruit Salad with Lime & Mint

Prep Time: 30 minutes
Servings: 8

INGREDIENTS

  • 8 medium grapefruits

  • 12 oz. blueberries, fresh

  • 8 oz. blackberries, fresh

  • 1/2 c pomegranate arils, separated

  • juice from 1 lime

  • zest from 1 lime

  • 2 Tbsp. fresh mint, chopped finely

INSTRUCTIONS

  1. Peel & section the grapefruits.

    *This is the most time consuming part of the recipe prep. You can also buy grapefruit sections pre-prepped if desired.

  2. Put the grapefruit sections in a paper-towel lined mixing bowl — grapefruits can be SUPER juicy! So this absorbs the majority of that extra moisture!

  3. Remove the paper towels & pat the grapefruit sections dry, additionally if needed.

  4. Add the blueberries, raspberries & 1/4 cup of pomegranate arils into the mixing bowl.

  5. Zest the lime over the bowl of fruit. Then slice & juice the lime onto the mixture.

  6. Add the chopped mint into the bowl.

  7. Using a spatula or large spoon, gently mix all ingredients together in the mixing bowl until mint & lime juice are evenly dispersed.

  8. Serve in a salad bowl or on a platter.

  9. Top by sprinkling remaining 1/4 cup of pomegranate arils.

    *Optional — add additional chopped mint or small sprigs of mint for décor!

  10. Serve & enjoy!
