Garlicky Cheezy Kale Chips

I ATE AN ENTIRE BUNCH OF KALE AFTER CREATING THIS RECIPE.

If you’re not a kale fan, here’s a recipe I am SURE will get you on board! I’m known for being a little bit of a kale freak (no shame) since I add kale into pretty much anything I’m making for myself at home. It’s so nutrient dense, easy to cook in a variety of ways & add into dishes. It’s my NO BRAINER for getting more greens into my day!

With the cooler weather sneaking up on us, I’ve been looking for a quick snack to munch on that is satisfying, but isn’t cold! It wasn’t until we turned this corner in the weather that I’ve realized that a lot of my go-to mid-day snacks are all a little too cool for enjoying on a chilly day! Not only is this recipe ready in 10 minutes for prime-time, immediate snacking, but cranking on that oven for a bit really warms the place up!

These Garlicky Cheezy Kale Chips are a nutrient packed snack with only 5 ingredients, around 100 calories and 9 grams of protein! They are gluten-free, vegan & basically the total package if you’re looking for a snack that’s quick, nutritious, delicious, AND helps bump that veggie intake!

Kale fans, I know you’re in…. The rest of you, don’t knock it ‘til you try it! This is a good one.

Garlicky Cheezy Kale Chips

Prep Time: 10 min
Servings: 4 servings

INGREDIENTS

  • 8 c kale (approx. 1 large bunch)

  • 1/4 c nutritional yeast

  • 1 Tbsp. garlic powder

  • 1 Tbsp. olive oil

  • salt to taste

INSTRUCTIONS

  1. Preheat the oven to 400 deg. F.

  2. De-stem and dry kale leaves. Tear or chop into bite sized pieces.

  3. Scatter the chopped/torn kale leaves onto a large, lined sheet pan evenly. Use 2 sheet pans if needed to ensure there is adequate space for the leaves. *More space means crispier chips!

  4. Drizzle olive oil on the kale, then massage into the leaves until thoroughly coated.

  5. Sprinkle nutritional yeast, garlic powder & salt onto the kale. Toss as needed to evenly cover the leaves.

  6. Bake for 5 minutes. Check for crisp leaves. Shake up the pan a bit & return to the oven for an additional 1-2 minutes if needed. *Keep an eye on it! Kale can go from crisp to burnt in a short time!

  7. Remove from oven and allow to cool.

  8. Eat right away or store in container allowing for some airflow. *I do not often store my kale chips, but crispiness may decrease the longer they are stored.

I don’t typically have leftovers of this to save for later (yeah, it’s THAT good) … But when I do, I refrigerate them in order to save them for later. ! I have been loving this recipe as an afternoon snack, or as a quick add into pasta dishes, or with simple proteins & carbs to round out a meal.
