Garden Guacamole

JUST WHEN YOU THOUGH GUAC COULDN’T GET BETTER…

Guacamole is a staple party food - whether you’re looking to throw a big SuperBowl party this weekend, or just want to munch on chips + guac on a week night — You WANT this recipe!

Avocados are jam-packed with vitamins, minerals + healthy fats that not only do the body some good, but taste delicious! Guacamole gets a little bit of a bad reputation as a party food choice as a “high fat” food that should be eaten sparingly - or if available, choose something else. Avocados alone are nutritious powerhouses - but throw in a garden’s worth of veggies? Even better.

And those fats? Nothing to be afraid of - in fact, those healthy monounsaturated fats actually help your body better absorb fat soluble nutrients, such as lycopene, in the vegetables traditionally served in or with guacamole - like tomatoes (1)!

With just a twist on the classic side dish + dip — this Garden Guacamole is about to add a little flavor + a load of veggies to your table!

Garden Guacamole

Prep Time: 30 min
Servings: 6

INGREDIENTS

  • 2 medium avocados

  • 1 medium zucchini, diced

  • 1/2 c tomato, diced

  • 1/2 c corn, fresh or canned

  • 1/4 c green onion, diced

  • 1 tbsp. olive oil

  • 1/2 c toasted pepitas, divided

  • 1 tsp. garlic powder

  • 1 tsp. smoked paprika

  • 1 tbsp. lemon juice

  • salt to taste

INSTRUCTIONS

  • Heat a skillet pan over medium heat.

  • Add in the olive oil, zucchini, corn, tomatoes, garlic powder + smoked paprika into the pan + cook 5-7 minutes or until starting to brown.

  • Add in the green onion + cook an additional 3-5 minutes.

  • Remove from heat + set to the side to cool completely.

  • Slice avocados in half, de-seed + scoop out the fruit into a medium mixing bowl.

  • Add lemon juice into the bowl + mash the avocado incorporating the juice.

  • Once the vegetables have cooled completely, fold them into the mashed avocado along with 1/4 c of the toasted pepitas, until evenly mixed.

  • Top the bowl of guacamole with the remaining toasted pepitas.

  • Serve + enjoy!
