Baked Buffalo Cauliflower Bites

SPICY, VEGAN + SUPERBOWL READY!

I am a big hot wing fan, but also a veggie fan. With the Super Bowl only a week away, what better time to start talking party eats + treats that are as delicious as they are healthy! I am always the one to bring a “healthified” dish to any football party we go to - and I make sure they never disappoint, football fans don’t mess around with their game-day eats!

I have wanted to make this recipe forEVER, but I had a hard time putting together a homemade sauce. Most of the recipes I’ve found or used in the past use a pre-made hot sauce in their “homemade” sauce - but I wanted to create my own!

The one I’ve created for these game-day bites is spicy, has no added sugar + keeps the whole dish vegan! Dial it back on the cayenne if you don’t care for super spicy “wings” or keep it as is to turn up the heat!

Baked Buffalo Cauliflower Bites

Prep Time: 15 min
Cook Time: 40 min
Servings: 4 (1 cup)

INGREDIENTS

FOR THE BITES

  • 1/2 head of cauliflower

  • 1/4 c almond flour

  • 1/2 c water

FOR THE SAUCE

  • 1/2 c vinegar

  • 3 tbsp. olive oil

  • 2 tsp. - 1 tbsp cayenne powder *depending on spice level you prefer

  • 1 tbsp. turmeric

  • 2 tsp. garlic powder

  • 1 tsp. chili powder

  • 1 tsp. chili powder

  • 2 tsp. arrowroot starch

INSTRUCTIONS

  1. Preheat the oven to 375 deg. F.

  2. Chop the cauliflower into bite sized florets.

  3. In a small bowl whisk together the almond flour and water to create a batter.

  4. In a medium bowl, toss cauliflower florets and batter together until evenly coated. Discard any extra batter in the bowl. Wash + dry the bowl to reuse.

  5. On a foil lined or greased cookie sheet, evenly spread the cauliflower florets. Bake for 20 minutes + remove from oven.

  6. While cauliflower is in the oven, in a small sauce pan or pot over medium heat - add in all sauce ingredients. Whisk together + cook until starts to thicken. Set to the side to cool + use.

  7. In the medium bowl, add the half-roasted cauliflower florets + half of the sauce. Gently toss to coat. Place back onto cookie sheet + continue to bake for 15-20 additional minutes. *Want them extra crispy? Keep them in the oven a little longer!

  8. Remove from oven + allow to cool. Add additional sauce as desired.

  9. Serve with carrot + celery sticks, dressing of choice and extra sauce! Enjoy!
