Fruit & Nut Chocolate Bark

A TRUE RD APPROVED SWEET TREAT!

A year ago today, we were hosting our wedding reception for all of our friends and family to celebrate are 2 day-old marriage! Splitting up our wedding and reception into two events had it’s challenges, but it was the perfect fit for our wedding week.

For our reception, we hosted an after dinner dance party and served appetizers, charcuterie, and this AMAZING chocolate bark — thanks mom for the solid, delish, and total show-stealing dessert. You guys, this bark was a freaking hit! I mean… Was having dessert on a table you pass while in line for the real food the best idea? Heck yes! Because everyone was all about trying bits and pieces of this apricot, cranberry, almond, and pumpkin seed covered slab of chocolate. People could not stop talking about it! Mom, you knocked it out of the park, and yes, I 100% ate the leftovers for weeks after the event.

Since we are celebrating one year of marriage, I wanted to share the ultimate healthy hack on a sweet treat! A true Registered Dietitian approved dessert you are going to want to make over and over again! With only six ingredients, the 2 hour wait time to stiffen up the chocolate might be tough, but ya’ll… It is SO worth it!

Fruit & Nut Chocolate Bark

Prep Time: 2 hours 15 min
Servings: 12

INGREDIENTS

  • 2 c semi-sweet or dark chocolate chips

  • 1/4 c dried apricots, diced

  • 1/4 c dried cranberries

  • 1/4 c almonds, chopped

  • 1/4 c pumpkin seeds

  • 1 tsp. coconut oil

INSTRUCTIONS

  1. Prepare a baking sheet by lining it with parchment or wax paper.

  2. Add the chocolate chips and coconut oil into a double boiler, or use a medium, heat-safe bowl over a pot of boiling water. Stir continuously until a smooth chocolate sauce.

  3. Pour melted chocolate onto lined baking pan and spread evenly.

  4. Sprinkle nuts and dried fruit evenly across the chocolate.

  5. Place in the freezer for at least 2 hours, or until hardened.

  6. Once completely hardened, remove the pan from the freezer and peel the paper away from the chocolate bark.

  7. Break the chocolate into pieces as desired.

  8. Store in the refrigerator or freezer.
