Blueberry Lavender Breakfast Bars

BRINGING SUMMER FLOWERS INTO YOUR KITCHEN!

Okay, if you haven’t jumped on the lavender EVERYTHING bandwagon yet, it is about dang time and I am bringing you the best recipe for testing the waters in botanical baking. I have ordered so many lavender flavored foods when eating out, grabbing coffee, or shopping around, but hadn’t tried it at home yet — but have been dying to! So when I saw dried lavender flowers in the bulk section and the shop down the street, I knew it was finally time to try it out!

Between lavender lattes, chocolate desserts, smoothies, and so many more items hitting menus all across the board, I don’t think this herbal remedy is going anywhere fast. Lavender has so many wonderful benefits (outside of tasting wonderful) like reducing anxiety, improving sleep, soothe digestive issues, and even boost cognitive function (1). Why not add a little bit of these pretty purple flowers into your day?!

I tested these bars out on some coworkers for a breakfast potluck and you guys…. I didn’t bring a single one home with me! These bars are just divine! Take a step away from your bowl of oats or plate of eggs and give these a try! Ready in 30 minutes with less than 10 ingredients, you can get boujee as heck without breaking the bank or unloading your entire baking pantry.

Low in added sugar.

Blueberry Lavender Breakfast Bars

Prep Time: 5 min
Cook Time: 25 min
Servings: 16 bars

INGREDIENTS

  • 2 c almond flour

  • 1/2 c coconut flour

  • 1/4 c coconut oil, melted

  • 1/3 c maple syrup

  • 2 egg whites

  • 1 tsp. baking soda

  • 2 tsp. dried lavender flowers

  • 1/4 tsp. salt

  • 1 c fresh blueberries

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F.

  2. In a medium mixing bowl combine all ingredients, except the fresh blueberries. Mix until thoroughly combined.

  3. Fold in blueberries until evenly distributed.

  4. Pour batter into a coconut oil greased pan and spread evenly.

  5. Bake for 22-25 minutes, until the top is golden brown and the edges start to crisp.

  6. Slice into 16 small bars, or 8 larger bars. Store in an airtight container for up to 1 week.

The final product may come out a little soft, so don’t be afraid to fork & knife this cute breakfast bar. Baking times may also vary based on your altitude (hellooooo high altitude CO baking!).
