Collagen Super Seed Energy Bites

OKAY. THESE HAVE BEEN BLOWING UP MY INSTAGRAM LATELY AND IT’S ABOUT TIME I GET THE RECIPE OUT.

So what makes these bites so special? Well, they’re delicious, they’re packed with healthy fats, protein, and a good mix of simple and complex carbohydrates to give you a little boost of energy, without the high-sugar burnout later. I have been enjoying these babies for snacks throughout the day, or at night for a little taste of something sweet. They’re legit addicting so, don’t say I didn’t warn you.

Health benefits from these bites? You betcha. Here are just a couple of the reasons you should add these into the snack rotation the next time you’re meal prepping.

HEALTH BENEFITS

//Omega-3 Fatty Acids//: Chia seeds and flaxseed are a great sources of those essential omega-3s (1). These fatty acids are shown to reduce inflammation, lower risk for chronic disease, and may improve cognitive performance and memory (2)

//Clean Protein//: Pretty much every ingredient in these bites provides a little protein. To add to the plant-based power, I added one of my favorite protein supplements; collagen peptides. Vital Proteins is my go-to brand. I absolutely love using their products to get in a little more protein because of how clean it is. I mean, it’s one ingredient. I can’t complain there. Collagen is also incredibly good for your hair, skin, nails, and can even help with joint pain (3), a great perk for athletes! **This ingredient can be left out if looking to go completely plant-based when recreating these in your kitchen, just adjust the protein content in the nutrient facts provided to 3 grams per bite.

//Vitamin E//: Both chia seeds and almonds are rich in this cell protecting vitamin. Almonds are known to be one of the best Vitamin E sources in the world (4). Vitamin E can be helpful in protecting against free-radicals which can reduce cancer risk (5).

//Fiber-ful//: Flaxseed, chia seeds, and oatmeal bring a lot of fiber into the mix which can help keep you fuller, longer after eating a couple of these energy bites.

Collagen Super Seed Energy Bites

Prep Time: 30 min
Servings: 24 bites

INGREDIENTS

  • 1c rolled oats

  • 1/2 c almond butter

  • 1/2 c maple syrup

  • 1/4 c flaxseed meal

  • 1/4 c chia seeds

  • 3 scoops Vital Protein Collagen Peptides

  • 1/2 c dark chocolate chips

INSTRUCTIONS

  1. Add all ingredients into a medium mixing bowl.

  2. Combine until evenly mixed.

  3. Using a melon baller, or small spoon, scoop mixture into small balls, using hands to roll and form as needed. If mixture is not sticking well, refrigerate for 20 minutes first.

  4. Place on a lined sheet tray.

  5. Refrigerate for at least 2 hours (or freeze for 1 hour).

  6. Store in an airtight container in the refrigerator for up to 2 weeks.

  7. Enjoy!

These pack really well when traveling, refrigerate and freeze without compromising flavor and texture, and are easy to whip up on the weekend to enjoy all week long. Test them out this weekend during that meal prep sesh for a week full of healthy snacking!
