Berry Beet Immunity Smoothie

I’ve got a handful of recipes that I released before the relaunch that I want to take a fresh look at, and give YOU a fresh look at them as well! Tweaked ingredients, pretty photos, and updated nutrition information is all included!
When I first created this smoothie, I had just received a Vitamix blender for Christmas from my fiance. I was basically ready to blend any and everything in our kitchen and was pretty pumped that a couple delicious combos came out well!
As cold as it’s been lately in Colorado, this immunity-boosting smoothie is a must during this cold and flu season. When I’m opting for a smoothie breakfast or snack, I don’t just want something delicious, I want something packed with nutrition as well.
Let me brag about one of my favorite veggies really quick. Beets. My fiance thinks they taste like dirt, but I love them. Roasted, pickled, juiced, or blended, I could eat them on the daily. They are a little earthy, and might take some time to warm up to, but paired with the right mix of fruit and veg, you can’t beat it (…get it?!). Beets, as well as the rest of the ingredients in this smoothie, are packed with nutritional benefits that are key during cold and flu season.

Berry Beet Immunity Smoothie
Prep Time: 5 min
Servings: 1 smoothie
INGREDIENTS
1 c unsweetened vanilla almond milk, or milk of choice
1 serving protein powder of choice
2 c dark green (beet greens, spinach, or kale)
1/4 large beet, fresh
1/2 frozen banana
1/2 c frozen strawberries
1/2 c frozen blueberries
1/2 inch fresh ginger, peeled
2 Tbsp. lemon juice
INSTRUCTIONS
Combine all ingredients into a high-speed blender.
Blend for 2-4 minutes until thoroughly mixed.
