RWB Coconut Yogurt Bark
THE HEAT THIS SUMMER IS JUST BEGGING FOR SOME FROZEN YOGURT!
Fro-yo is a summer staple and this sweet little snack is about to be one too! The 4th of July is hands down my favorite holiday – the fireworks, the food – and yeah it helps that I got engaged under those fireworks last year, but even before, I’ve loved celebrating the red, white and blue.
Healthy summer foods don’t have to get skipped out this holiday weekend – and it’s never too cheesy to work with the holiday theme! Enter this red, white, and blue yogurt bark. Three ingredients, simple foods, and naturally sweet. I used one of my favorite yogurt brands, Siggi’s because of their uncompromising commitment to quality products that aren’t sugar-bombs disguised as health foods. Most flavors have fewer grams of sugar than of protein – yes please! I chose to use the coconut flavor (a favorite of mine) but if you aren’t into that semi-tropical vibe, the plain or vanilla options are great substitutes!

Beat the heat this holiday week with a little homemade frozen yogurt bark!
RWB Coconut Yogurt Bark
Prep Time: 2 hours
Servings: 4
INGREDIENTS
2 5.3 oz. containers, Siggi's 2% coconut yogurt
1/2 c fresh or frozen blueberries
1/2 c fresh or frozen raspberries
INSTRUCTIONS
Line a cookie sheet with parchment paper.
Stir yogurt in case of natural separation and spread evenly on the parchment paper.
Evenly place the berries on the yogurt. Press into the yogurt a bit to make sure they stick.
Put the cookie sheet into the freezer and chill at least 2 hours, until hardened.
Remove from the freezer and break into snack-sized pieces.
Store, serve and enjoy frozen!
