Roasted Cinnamon Sugar Almonds

Looking for a simple snack to have on hand?? These roasted almonds are a quick grab when you need a little energy during the day. Plus anything tossed in the oven for a little roasting is warming and comforting on cooler days.

I used coconut sugar and ceylon cinnamon for this recipe to add a little bit of a nutrient boost! Coconut sugar, while still a sugar which your body digests very similarly to regular white sugar, still retains some of the nutrients from the coconut palm it is made from. It contains minerals such as iron, zinc, and calcium, and it has a lower glycemic index than table sugar as well! Ceylon cinnamon in a new addition to my pantry and I am LOVING it! It has a different taste than cinnamon cassia, which is a more common type of cinnamon, but the health benefits are very similar. If you don’t have ceylon cinnamon around, you can definitely use what you already have in your spice cabinet!

Roasted Cinnamon Sugar Almonds

Prep Time: 5 min
Cook Time: 20 min
Servings: 8

INGREDIENTS

  • 2 c raw almonds

  • 1/3 c coconut sugar

  • 1 Tbsp. cinnamon

  • 2 egg whites

  • 1 tsp. vanilla extract

INSTRUCTIONS

  1. Preheat the oven to 250 deg. F.

  2. In a medium mixing bowl, add the egg whites and vanilla extract.

  3. Whisk together until mixture becomes frothy.

  4. Add almonds into the bowl, mix with egg white mixture until completely coated.

  5. Add coconut sugar and cinnamon to the bowl, mix again until almonds are evenly coated with mixture.

  6. Pour almonds onto a baking sheet and spread out evenly.

  7. Roast in the oven for 20 minutes.

  8. Remove from oven and allow to cool completely.

  9. Store almonds in an air-tight container for 10-14 days.
