Pink Pickled Onions

Everything is prettier in pink.

I’ll be the first to admit that it takes a special kind of onion to get me to eat it. I’ve always picked them out of dishes, never added them to burgers & basically tried to avoid them as much as I could!

Until I met… Pickled. Onions.

Vinegar-y, sweet-ish, pepper-y onions? This, I was SUPER into! I’d add them into salads. onto sandwiches if I saw them on a menu. But I knew I needed a quick way to make them at home! This is the perfect time of year for adding a bright, acidic punch of flavor to those savory summer dishes.

You can add these pickled onions to:

sandwiches
salads
bbq dishes
avocado toast
omelets
tacos

& pretty much anything you want!

Ready in just 30 minutes (but longer marinating means more flavor) — these are a summer fave in the making to top, mix or add into just about dish you’re whipping up!

Pink Pickled Onions

Prep Time: 30 minutes
Servings: 16

INGREDIENTS

  • 2 medium red onions

  • 1 c white vinegar

  • 1/2 c red wine vinegar

  • 1/2 c apple cider vinegar

  • 1 Tbsp. sugar

INSTRUCTIONS

  1. Thinly slice red onions by hand or using a mandolin.

  2. Place sliced onions into a large mixing bowl.

  3. Over the top of the onions, pour the white, red wine & apple cider vinegar, as well as the sugar.

  4. Mix with a fork, spatula, or your hands until sugar is dissolved & vinegar is mixed.

  5. Evenly divide onions & vinegar mixture between 2-3 mason jars (depending on size you have). Make sure vinegar mixture fully covers the onions in the jar.

  6. Store in the fridge for up to 2 weeks.

MAKE IT YOUR OWN

  • Add peppercorns or hot peppers to spice it up!

  • Skip the sugar for a no-added sugar version

  • Add fresh herbs for extra flavor.
