Instant Pot BBQ Chicken

Instant Pot to the rescue!

Okay, I am very obsessed with my Instant Pot. We make so many pieces of our weekly meal prep in it! Seriously… over the weekend it’s sitting on our counter the WHOLE time, we just wash it between batches of broth, chicken, rice & so much more. The new-age “set it & forget it” style of cooking - all you’ve got to do is dump the ingredients in, push a couple buttons & your food is prepped & ready in no time!

This warmer weather has me craving some good ol’ BBQ flavor - but I’d rather not heat up the house with our counter-top grill, stove-top burners or oven so…. enter Instant Pot! This three ingredient recipe is a great back-pocket meal prep hack for weeks when you need some serious flavor ready in advance.

Instant Pot BBQ Chicken

Prep Time: < 5 minutes
Cook Time: 30 minutes
Servings: 8 (4 oz. portions)

INGREDIENTS

INSTRUCTIONS

  1. Add chicken, BBQ sauce & bone broth into your Instant Pot. Lock in the lid.

  2. Set your Instant Pot to Pressure Cook for 30 minutes & seal the venting value. *If using frozen chicken, set timer to 1 hour.

  3. Cook away! *When timer goes off, you can either manually release the pressure or wait for it to slow release.

  4. Shred chicken with two forks while still in the Instant Pot.

  5. Store in an airtight container for 1 week.

    *You can also cook this chicken in a stove-top pot if you don’t have an Instant Pot! Add all ingredients into the pot, set to medium heat & cover. Cook until internal temperature is over 160 deg F.

DRESS IT UP

  • Add 1 tsp. chili powder, 1 tsp. smoked paprika, & 1/2 tsp. cayenne to spice it up!

  • Switch up the sauce you buy! There are so many out there!

  • Top with pickles or pickled onions.
