Coconut Creamsicle Smoothie

Summer is coming to an end quicker than we know it, but that doesn’t mean the fresh, flavorful foods of summer are gone yet! Peach season in Colorado (late summer to early fall) is BY FAR one of my favorite times of the year. Palisade, a town in western Colorado, is known for their sweet, juicy, delicious peaches, and you can bet that I’m living off of those fruity gems all season long!

Now let’s talk creamsicles. This smoothie tastes just like the creamsicles you could get off of the ice cream truck back in the day. There’s no cream or dairy in this recipe, but that creamy flavor comes from the coconut. I found these “Just Coconut” chunks at Trader Joe’s and it has totally changed my smoothie game. They take a little more time to blend up, but it is worth the wait!

This recipe is gluten free, dairy free, and can be paleo or vegetarian based on what kind of protein powder you choose! Perfect for a refreshing afternoon sip, or a sweet way to start your morning, this smoothie is bringing that summer love all day long!


Coconut Creamsicle Smoothie

Prep Time: 5 min
Servings: 1 smoothie

INGREDIENTS

  • 1 c unsweetened vanilla almond milk

  • 1/2 c orange juice

  • 1 c fresh or frozen peaches

  • 1/2 c coconut chunks (5-7 pieces)

  • 1 serving protein powder of choice

INSTRUCTIONS

  1. Add all ingredients into a high-speed blender and blend until smooth, approximately 2-3 minutes. *Note: if using fresh peaches, add 1 cup ice to create a thicker smoothie.

  2. Pour into your favorite glass and enjoy!
