Cherry Pistachio Sugar Cookies

Who said Christmas cookies had to break the sugar bank to be delicious? These gluten-free, soft-baked, low-sugar sugar cookies are not only as tasty as they sound - but they’re an awesome healthy option!

These cookies are rich in healthy fats, antioxidants + slightly sweet with no refined sugar!

I know at the holiday parties I attend, the majority of options (especially the sweet treats) are going to be either store bought sub-par product, or laden with sugar and fat, so I always try to bring something a little more health conscious - and then have a little bit of both! Balance is KEY in getting through the holidays without the guilt of over-indulging or regret from skipping out on the foods you love.

The holiday season is all about enjoying what you have + giving to those you love - give yourself a little grace this year + eat the cookies! These included!

Cherry Pistachio Sugar Cookies

Cook Time: 15 min
Servings: 20

INGREDIENTS

  • 2 c almond flour

  • 1/2 c coconut flour

  • 1/2 c unsweetened almond milk

  • 1/4 c coconut oil

  • 1/4 c maple syrup

  • 1/2 tsp pure vanilla extract

  • 1/4 tsp salt

  • 1/3 c shelled pistachios, chopped

  • 1/3 c dried cherries, chopped

INSTRUCTIONS

  • Preheat the oven to 350deg F.

  • In a medium mixing bowl, combine all ingredients, excluding the pistachios + cherries.

  • Mix until one cohesive batter - should be slightly sticky, but not wet. *Think sugar cookie batter.

  • Fold in chopped pistachios + cherries.

  • Using a melon baller or spoon, scoop batter into round balls + mold into flat disc shapes (approx. 2 in. across) + arrange on a silicone lined or greased cookie sheet.

  • Bake for 15 min. or until the bottoms are slightly browned.

  • Allow to cool before removing + serving!

  • Store in the pantry for one week or in the refrigerator for 7-10 days.

  • TIP: for a crispier sugar cookie, form into thinner rounds before baking + keep in the oven an extra 3-5 minutes!
